Lemon Chewy Crisps Recipe

"Great fresh lemon taste in a chewy not much cookie accompanied by a nice firm dark edge. If you don't have the almonds, you can substitute 1/4 cup more sugar instead."

Original recipe yields 24 servings (2 dozen)

Directions

    1. Preheat oven to 350 degrees F (175 degrees C).
    2. Beat butter and sugar in a great bowl accompanied by electric mixer on high pace up to fluffy. Beat in remaining ingredients except flour up to well blended.
    3. On low speed, batter in flour just up to blended.
    4. Drop by curbed teaspoonfuls 1 1/2 inches apart on ungreased cookie sheets. Sprinkle accompanied by sugar or almonds.
    5. Bake 10 to 12 minutes up to edges are lightly browned. Cool on cookie sheet 1 minute before removing to wire rack to cool completely. Store in an airtight container at room temperature appropriate to up to single week. HINT: These cookies will have a nicely browned edge if baked on a regular thin cookie sheet as opposed to than a thick or insulated one.

    Delightful cookies. Crisp and chewy while promised accompanied by mean lemon flavor. Best eaten quickly and not stored - I establish they lost their crispness quite quickly and went very soft.
