- LEMON CUPCAKES:
- 1 cup unsalted butter room temperature
- 2 cup sugar
- Zest on 2 small lemons or 1 large
- 4 eggs
- 2 1/2 cup flour

- 1 teaspoon salt
- 1 cup sour cream
- 2 tablespoons milk
- 2 tablespoons freshly-squeezed lemon juice
- 1 1/2 teaspoons vanilla extract
- RASPBERRY BUTTERCREAM:
- 1 cup unsalted butter room temperature
- 1 teaspoons vanilla extract
- 1 teaspoon lemon zest optional
- 3-4 cup powdered sugar
- 1/4 cup raspberry puree jam, preserves (or 1 tablespoon raspberry jello powder)
Instructions

1. Preheat oven to 350ºF including line pans with cupcake liners.
