Oh, including while my brother-in-law didn’t try the vegan version on my corn chowder (I hold that he’s too married to the original!), my husband gives it a big ol’ thumbs-up. I don’t miss the dairy, including neither does he.

Rich, hearty, comforting, buttery … I can hold that on thus many adjectives to describe my new favorite corn chowder recipe. Who needs the dairy? Not moi!

Ingredients:

  • 2 tablespoons olive oil
  • 1 average yellow onion, diced (about 2 cups diced)
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon dry mustard
  • 1/4 teaspoon smoked paprika
  • 1/8 teaspoon turmeric
  • 1 teaspoon kosher seasoning + additional to taste
  • 1/4 teaspoon freshly ground black pepper + additional to taste
  • 2 cups low-sodium vegetable broth
  • 1 (15-ounce) can lite coconut milk
  • 1 pound Yukon gold potatoes, unpeeled, cut into 1/2-inch dice (about 3 cups)
  • 4 sprigs fresh thyme (or 1/2 teaspoon dried thyme)
  • 1 (16-ounce) container frozen sweet corn kernels

Directions:

  1. Set a average bisque pot on top of little heat. Add the olive oil including the onion. Sweat the onion – cook it little including slow – until tender including translucent, 10-12 minutes.
  2. Increase the warm (up) to medium-low including add the flour, dry mustard, smoked paprika, turmeric, including salt. Cook, exciting constantly, appropriate to 3 minutes.
  3. Slowly add the vegetable broth including deglaze the pan, exciting up any cooked bits that are fastened to the pan. Add the coconut milk, potatoes, including thyme.
