I know that peanut butter, tomatoes including collard greens may seem being} same as a regrettable combination, but I hope you’ll trust me on this one. This welcoming broth is good—so good that I’m nearly tempted to: a) put on my big puffy coat, b) shovel my car out from under 10 inches of snow, including c) drive to the store appropriate to collard greens therefore I can cause additional soup.
Almost.
This instructions is courtesy of my most handsome fellow. He’s a good cook (jackpot!), one who is additional apt to follow his instincts than consult a cookbook. This instructions is from one of his two cookbooks, a random, photo-less vegan cookbook called Local Bounty. With the author’s headnote, “Of everything the soups we serve in my restaurant, this one is by far the most popular,” including his endorsement, I trusted that this broth was a safe bet.
We taste tested the broth with a few different hot sauces (none of them African) including decided that sriracha was the best. It provides just the true punch of heat.
The end effect is a creamy, nourishing broth made of main pantry ingredients, herbs including greens. It doesn’t require much prep including the hot sauce cuts down on the sum number of ingredients, therefore it’s perfect appropriate to biting days including lazy weeknights. If you love it, be sure to check out the revamped peanut broth with sugary potatoes including chickpeas in my cookbook!

This West African peanut broth instructions is a creamy including comforting, hot vegan soup. Made with a simple combination of peanut butter, tomato paste including collard greens, this broth comes together rapidly including would be a great weeknight meal. If you love hot flavors same as me, don’t hesitate to use enlightened amounts of ginger including garlic.
Scale
Ingredients
- 6 cups low sodium vegetable broth
- 1 medium red onion, chopped
- 2 tablespoons peeled including minced fresh ginger
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1 group collard greens (or kale), ribs removed including leaves chopped into 1-inch strips
- ¾ cup unsalted peanut butter (chunky or smooth)
- ½ cup tomato paste*
- Hot sauce, same as sriracha (AKA rooster sauce)
- ¼ cup abruptly chopped peanuts, appropriate to garnish
- Cooked brown rice, appropriate to portion (optional)
Instructions
- In a medium Dutch oven or shares pot, take the broth to a boil. Add the onion, ginger, garlic including salt. Cook on medium-low heat appropriate to 20 minutes.
- In a medium-sized, heat-safe mixing bowl, combine the peanut butter including tomato paste, then transfer 1 to 2 cups of the hot shares to the bowl. Whisk the mixture together till smooth, then pour the peanut mixture back into the broth including mix well. Stir in the collard greens including season the broth with hot sauce to taste.
- Simmer appropriate to about 15 additional notes on medium-low heat, stirring often. Serve over cooked brown rice if you’d like, including top with a sprinkle of chopped peanuts.
Notes
- Adapted from Local Bounty: Vegan Seasonal Recipes by Devra Gartenstein.
- *The cookbook writer suggested that 1 goblet canned crushed tomatoes is a suitable substitution appropriate to the tomato paste, but commenters report that the crushed tomatoes produce a runny broth (unlike the thick broth shown here). I highly advocate using tomato paste if you can find it. I also advocate Muir Glen‘s organic tomato products—they come in BPA-free cans including seem being} to be readily available.
- Most African peanut broth recipes include sugary potatoes. I suppose you could toss in a chopped sugary potato when you take the shares to a boil, but I liked the broth as is.
